26アフタヌーン・ティー:人気の秘密クラシックなサンドイッチの具材は何でしょうか?Martyn: Um, I think, uh, I think Claridge’s has a history. And Ithink, whatever you think of afternoon tea, you have a certainexpectation. And I think food is very much reinvented in everycountry of the world now. The world was gone very, very small interms of food, and I think what people expect is a classic identityfor afternoon tea, and I think that’s what we deliver. I think youexpect to see sandwiches with classic fillings, very beautifullycut with no crusts, and the fillings should be very typical of whatpeople would have had in the past. So cucumber and smokedsalmon, um, egg: they are all very classic fillings. Together withscones and clotted cream. Traditionally that would have been withstrawberry jam.And I also think it’s very much, um?when we look at all ourfillings and all our flavors and everything that we serve forafternoon tea, it’s very much thought through. It’s very much,we like these things together because they should go together, orwe found a particular ingredient that goes in there, and it’s aboutthe quality of the ingredient. For example, that’s why we don’tuse strawberry jam. We use a Marco Polo jelly. And then in ourpastries, our tea pastries, I think they should have, of course,like everything now, great flavor. But they should also look likeafternoon tea pastries. Not too small, but also not too big. And theyshould have color and texture and, as I said before, great flavor.Section1Track 03Pre-Question
